For our saute of mussels and clams we use tasty molluscs with an unmistakable taste.
Delicious to eat as an accompaniment to first courses (in white or tomato sauces), they are also excellent solitary and sauté is the proof. The chefs of our restaurant, with wisdom and judgment, choose the best quality and, with passion, prepare them following the traditional Italian recipe: cooked over a high heat with aromas such as garlic, parsley and black pepper. The recipe cannot miss a drop of wine, which is slowly evaporated, thus leaving a savory sauce that will be served by soaking the shellfish. A riot of Mediterranean fragrances and seafood flavors that blend well with Venice. But these shellfish are not only precious for cooking recipes but are also rich in history; few know that clams were used as exchange currency by Native Americans and that mussels were already tasted in the Paleolithic age, both in Europe and in America. In short, mussels and clams never go out of fashion, even after millennia!
