We’re halfway through April, but we can already feel the summer in the air. Summer means fruits and the melon is one of the favourites fruits of the season. Today we’re talking about the melon in Porto wine.
The melon in Porto wine is a simple preserve and a clever way to conserve the sweet taste of the fruit. The preserve consists of pulpy little balls of melon, immersed in a syrup made of water, sugar, vanilla, cinnamon and carnation flowers. The syrup is boiled and the Portuguese wine Porto is added, giving the name to the recipe. At the end, the melon can be poured in small glass jar. The preserve in jar is not only functional, but also pleasant to look at.
