The Venetian cooking tradition has a great variety of cookies, including the famous and the loved baicoli. It is said that the name “baicolo” comes from the thin shape of the cookies that resembles the shape of the mullet, a species of fish that is quite thin.
The baicoli are a dry and thin kind of cookies, whose shape resembles the one of the toasts. The long and thin shape is obtained from slicing a small but long bread: the slices are left in their original position, which means they are just next to each other. Their long-term expiration date and their capacity of maintaining their aroma unaltered, if they are preserved in a tin can, makes them perfect for long sea journey. The famous Venetian cookies are often sold in yellow tin cans as the tradition wants.
The baicoli are dry cookies so they are often served with coffee or zabaione in which they can be dipped.
