Venetian biscuits, specifically, are well known for their variety of shapes (and names) and for the soft shortcrust pastry. The most famous ones are the Baicoli, which show an elongated-bread shape and are sold in typical tin cans; they can stay fresh for a long time, so they used to be stock for long-lasting journeys on boat. From the city of Burano, instead, we can find the Bussolai and the Essi: their main characteristic is that their dough is actually the same, but the shape created (ring-shaped or “s”-shaped) turns into two different products.
